STUFFED ZUCCHINI
- Large zucchini, sliced lengthwise then scoop out the seeds but leave about an inch on each end which will make your "boat".
- Ground beef (Or Turkey...)
- 2 chopped red/yellow/green peppers in any combination
- 1 purple onion, diced
- 1/2 cup shredded cheddar
- 1 pk of cream cheese
- Cook the ground beef, onion, and bell peppers
- In a large bowl, add beef, cheddar, and cream cheese.
- Spoon mixture into each zucchini boat.
- Put shredded cheese on top.
- Bake 400* for 30 minutes. Depending on the size of the zucchini you may have to cook it a bit longer.
- Top with a bit of sour cream and call it DINNER...
